Some of our favorite recipes!
Meatloaf
1 lb. ground beef
1 cup oatmeal
1 cup tomato sauce
Chopped onion
1 egg
salt / pepper
Preheat oven to 350°. Mix all ingredients well. Grease pan 9×9, press into pan. Optional top with remaining tomato sauce. Bake 45 min to 1 hour.
Steaks – Dry salt brine
Bring steaks to room temperature. Pat dry.Bring steaks to room temperature. Pat dry.Generously salt both sides, Kosher or Sea Salt (1/2 tsp per pound of meat). Place on rack above a foil lined tray and place in fridge for 3 days. 24 Hours is OK but 3 days is best! Pull out of fridge bring to room temperature. Heat oven to 350 degrees. Heat small mount of favorite oil in a cast iron skillet and sear steaks on both sides. Place in oven and cook to 5 degrees below desired doneness. Remove from oven and allow 5 minutes to rest. Meat will continue to cook to desired doneness.
Rare – 120-125
Medium-rare – 130-135
Medium – 140-145
Medium well – 150-155
Well done – 160 and above
